What Affects the "Color Back" of Edible Oil

The phenomenon which light color of refined cooking oil in storage process gradually deepened is known as "color back".The essence of the phenomenon of oil color reversion is the oxidation of pigment, isomerization or the polymerization of low molecular pigments. The rate varies depending on storage conditions. The time to achieve the highest chromaticity is less than several hours, however the longest time will take half of a year.

There are many factors affecting this phenomenon, mainly including quality of the oil, variety of the oil, preparation of the oil, conditions of refining, and the storage conditions etc. The oil made from high moisture oil is easy to color back. Under the condition of low vacuum and high temperature, the refined oil is easy to color back. The oil with deep refining and without antioxidants is easier to be oxidized and produce new pigment.
